MASHED POTATO
Mash boiled potatoes, then add one quarter Cup dry INDM for each
Cup of potatoes, add water to obtain the desired consistency. If
desired, serve with gravy (see gravies/sauces).
ONE-PAN MACARONI AND CHEESE
Serves 4
2 Cups cooked elbow macaroni (1 Cup uncooked)
2/3 Cup dry INDM
1 Cup shredded cheddar cheese
1/2 Cup water
2 Tbs. butter or margarine
Drain macaroni and return to pan. Mix water and dry INDM and add
to macaroni. Add cheese. Stir over low heat until melted.
CREAMED VEGETABLES
3 Tbsp butter
3 Tbsp dry INDM
2 Tbsp flour
1/4 tsp salt
Pepper to taste
1 Cup water
2 Cup drained vegetable, cooked or canned
Melt butter in 1 1/2 quart sauce pan. Work butter into mixture
of dry INDM, flour salt and pepper. Gradually stir in water. Heat
until boiling. Reduce heat and cook slowly for two minutes, stirring
constantly. Add vegetables and heat until steaming hot.
CORN PUDDING
Serves 6
3 eggs
2 Cups liquid (corn liquid plus water or fluid milk)
1/2 Cup dry INDM
2 Tbsp melted fat
1 Tsp of salt and pepper
Combine eggs and liquid, and add dry INDM. Beat until smooth.
Add other ingredients. Pour into a greased baking dish and bake
in a moderate oven (350 F) until set, about 50 minutes. Note: Other
veggies can be used instead of corn.
